Sloppy Sloppy Joes

It’s beginning to feel a lot like summer in Tennessee, and something about all things on a bun scream summer to me, which is problamatic if you eat the ketogenic diet but not problamatic if you have an answer to the whole bread thing.

Now this recipe is not dairy free like I prefer, but when your husband is craving sloppy joes you do what you can to accomidate him! Am I the only one that thinks of sloppy joes as “man food?” I mean, would a bunch of gals sit around and eat sloppy joes, I really don’t think so! But again, I ate them and enjoyed them so what do I know, let’s be honest.

BUNS

  • 16 oz mozzerella cheese
  • 8 oz cream cheese
  • 2 tbsp garlic
  • 2 eggs
  • 1/4 cup parmesean
  • preferred spices (I like the Trader Joe’s bagal everything bagal seasoning, but you can totally make your own too! Get creative!)

Throw your shredded cheese in a microwave safe bowl with a block of cream cheese, microwave for two minutes. Stir. Microwave again for 1 minute. Stir. Put your garic in, and whip your two eggs in a small dish together and then pour in, add your parmesean, stir together (at this point you want to message me and ask if I forgot the almond flour. No, I didn’t. You don’t need it in this recipe and it just adds more carbs.) Pour your dough on parchment paper and back in a 400 degree pre-heated oven for 12 minutes. Pull your dough out and slice the desired sizes of “buns” youd like and throw back in for ten more minutes. I just sliced ours into 4ths, because that seemed easy. But you do you, boo.

While that’s going on, make your joes all sloppy (that sounded better in my head).

SLOPPY JOES

  • 1 pound ground meat
  • 1 small white onion
  • 1/2 clove garlic (I lift mine in big chunks)
  • 3/4 cup ketchup (use Tessemaes or Alterna Sweets brand to keep your carbs low)
  • 1 tbsp white vinegar
  • 1 tsp desired sweetener

Brown the meat, and add everything else and ketchup last. Sautee until everything is nice and coated and serve on your buns that have been cooling and ready.

This is such a satisfying meal and even better left over!
