Chocolate Sponge Cake. CAKE!

KETO SPONGE CAKE

six eggs

1/4 cup olive oil

2 cups almond flour

2 tsp baking powder

2 heaping teaspoons powdered chocolate

1/2 cup chocolate chips (I used KNOW brand)

1/2 cup unsweetened coconut

3/4 cup swerve granular

Preheat your oven to 325. Put your six eggs in a bowl and mix with a hand mixer until thoroughly combined and fluffy, add remaining ingredients, leaving out the chocolate chips and coconut for last, and continue mixing. Once mixed, hand mix chocolate chips and coconut. Pour in a greased 9×9 baking dish and bake for forty minutes.

Serve hot, or let chill. Once chilled, I prefer to reheat each slice. I topped mine with dairy free kite hill brand cream cheese, and it tastes like HEAVEN. This keeps really well too!
