You heard it here first, radishes standing in for potatoes in potato salad. Now, I know you’re already like NO. But remember, we are keto here, so desperate times call for desperate measures. And apparently yesterday, I was deperate for potato salad, except I don’t do potatoes because I eat keto, have I mentioned this?
If you give a mouse a cookie, radish in this instance, let’s see what she can do. You better believe I can turn it into potato salad!
I’ve made this two ways, and roasting your radishes versus boiling them is the better choice here, it makes them have much more of a potato texture.
Potato RADISH Salad
- two bunches of radishes, diced
- one cup mayo
- 1 stalk celery diced
- 1 small red onion
- 4 tablespoons dill
- salt + pepper
- 1 tablespoon seeded mustard
Preheat your oven to 350. Wash your radishes and cut them in half, sprinkle generously with salt and pepper, roast for one hour. Let them cool. Once cooled, add to a mixing bowl with your remaining ingredients, stir well and chill.
I served mine with burgers and hotdogs and berries, I felt so “nonketo” with my potato salad! Let me know what you think!
