Mini Skillet Chocolate Chip Cookie

Mini Chocolate Chip Skillet Cookie

Dry Ingredients:

1 cup of almond meal (super fine almond flour)

1 1/2 teaspoons of baking powder

Wet Ingredients:

2 eggs

1 cup swerve, granular

1/3 cup of olive oil

2 teaspoons of vanilla

1/2 cup chocolate chips ( lilys, enjoy life brand are both good options)


  1. Preheat the oven to 350.
  2. In a large bowl, mix together your almond meal and baking powder. Set aside.
  3. In a smaller bowl, mix together your eggs, swerve, olive oil, vanilla and chocolate chips.
  4. Add your wet ingredients to your dry ingredients and ix together well.
  5. Pour into your pregreased 6.5 inch cast iron skillet and bake for thirty minutes.
