Mini Chocolate Chip Skillet Cookie
Dry Ingredients:
1 cup of almond meal (super fine almond flour)
1 1/2 teaspoons of baking powder
Wet Ingredients:
2 eggs
1 cup swerve, granular
1/3 cup of olive oil
2 teaspoons of vanilla
1/2 cup chocolate chips ( lilys, enjoy life brand are both good options)
Instructions:
- Preheat the oven to 350.
- In a large bowl, mix together your almond meal and baking powder. Set aside.
- In a smaller bowl, mix together your eggs, swerve, olive oil, vanilla and chocolate chips.
- Add your wet ingredients to your dry ingredients and ix together well.
- Pour into your pregreased 6.5 inch cast iron skillet and bake for thirty minutes.
