The other day I was craving chocolate. “The other day…” I say that like it’s a rarity. When am I not craving chocolate? For real though, I am a more savory than sweet gal but I like to have an emergency chocolate stash. We were out though, so I took matters into my own hands with what I had available in the kitchen.
I made mine dairy free which meant it had a little more carbs, but I am okay with that especially because I just needed literally one bite and it will last a while (don’t remind Brad we still have some). It was so easy I wanted to share it with you.
Keto Chocolate Bars
3/4 cup peanut butter or almond butter
1/4 cup unsweetened coconut
- In a small sauce pan, melt together over medium heat your chocolate chips and peanut butter continually stirring until melted.
- Once melted, add your coconut and stir until moxed.
- Spread this mixture out on a parchment lined sheet pan and freeze until solid (about an hour)
Once I was ready to have a bite, I removed mine from the freezer and cut it into little bite sized triangles and placed it in the refrigerator for easy strorage. The peanut butter makes it super soft even when cold which I love…gotta go, think I’ll go have another bite now!
