
Desperate, she made brownies. Dramatic, she writes.
A few years ago all my camera equipment got stolen and slowly we have begun replacing all my equipment as the budget allows. It’s been fun to get back into taking pictures with a real camera versus a phone. On this day, I needed a willing subject and so a brownie had to be created.
Skillet Brownies *with a hint of pumpkin (that can also be made in a 9 x 9 baking dish)
Ingredients:
2 cups of fine ground almond flour/meal
2 teaspoons of baking powder
3 tablespoons of cacao powder
3/4 cups of swerve, granular
1/2 cup of golden monk fruit sweetener
2 teaspoons of vanilla
3 eggs
1/3 cups of pumpkin spice nutpods (you can replace this with canned coconut milk and 1 teaspoon of pumpkin spice)
1/4 – 1/2 cup of enjoy life chocolate chips (optional)
1/3 cup of olive oil
DIrections:
- Preheat the oven to 375.
- Add the ingredients above in the order list above. Stirring well after each additional ingredient.
- Once all ingredients are mixed together, pour in a (greased) large cast iron skillet or a (greased) 9 x 9 baking dish.
- Bake for 25 minutes. Top with a few chocolate chips.
Serving suggestion: Serve these with some coconut whipped cream and a sprinkle of pumpkin pir spice and some swerve confectioners OR froth a little pumpkin spice nutpods and pour over. Can’t go wrong no matter how you serve them.
