As you know, Brad is a huge WWE fan and I have become a second-hand fan because I like my husband and I like to have a party anytime I can create something fun. Today there was a pay-per-view that happened in Australia so that meant it came on at 4 am Saturday morning here, so we watched it on delay and started it at 7 am.
Peggy has been sleeping like a newborn since he’s been sick and on new medicine. Brad was up with her at 3:30 am and then Vern fussed from 3:30 til we finally got up at 5 am because he was aggravated that Peggy had woken him up. Lord have mercy on me.
Since we were up and at em, I went ahead and made a Quiche to have a little breakfast in bed party for Brad. We (me, Vern and Peggy) made the Quiche and went upstairs at 7 am with quiche and coffee to start out wraaaslin’ party. I’d be lying if I said I was super into it. I was way into the Quiche and coffee, but I totally pretended like I was watching and was completely out like a light. When Brad would make random comments to me, I would comment yes or no from my slumber…it was exhilarating.
Dairy free Crustless Quiche:
1 pound of sausage
1 small white onion
3/4 cup of coconut milk
1 1/2 tablespoons of paleo powder all-purpose seasoning
Because of the flavors of the sausage, this is a super flavorful and filling Quiche!
In a large skillet, brown your sausage with your onion until cooked thoroughly.
In another bowl, mix together your eggs and coconut milk.
Combine your meat mixture with your egg mixture and pour into a pre-greased baking dish and cook at 350 for 45 minutes. I topped mine with thinly sliced tomatoes before I baked it but that’s completely optional.
I added some Franks Red Hot once cooked and served because that’s how I roll. Spicy.
