I was craving a chewy chocolate chip cookie the other day, and had some choczero chocolate chips on hand and all the other ingredients (COLD BUTTER!) and whipped up a batch, surprised Brad and just thrilled myself!
CHOCOLATE CHIP COOKIES for Santa
6 tablespoons of cold butter
3/4 cup of the low carb sugar you prefer
2 eggs
1 teaspoon of cinnamon
3/4 teaspoon of cornstarch
2 cups of almond flour
1 teaspoon of vanilla
1/4-1 cup choczero chocolate chips
Preheat your oven to 325. In a large mixing bowl, cut butter into small pieces and mix with a stand or hand mixer until fluffy. Add your sugar, eggs, cinnamon, and cornstarch. Slowly add the flour and lastly the vanilla. Hand stir in your chocolate chips. On a parchment lined cookie sheet, place your cookies 2 inches a part. This recipe will make 12 large cookies and 24 smaller cookies. Bake for 15 minutes.
These are so good and will be A HIT with Santa, I am confident! I think he’d prefer a zevia instead of milk though…Make sure not to eat all the batter…
