Cauliflower Mash


The perfect side to about anything is cauliflower mash. Taste just like twiced baked potatoes and one of those dishes you always just need one more spoonful of — over and over again.

Cauliflower Mash

2 12 ounce bags of frozen riced cauliflower (I tend to get the steamfresh garlic)

8 ounces of sour cream

6 tablespoons of kerrygold butter

salt, pepper, garlic, red pepper to taste.

5 ounces of shredded cheddar cheese

4 tablespoons of bacon bits

2 teaspoons of chives

Preheat your oven to 350 degrees. Heat your microwaveable bags of cauliflower rice according to packaged directions. While cooking, in your blender put your sour cream, butter, salt, pepper, garlic and red pepper, add your heated riced cauliflower once hot and blend until smooth and has a mashed potato texture. Pour into a greased baking dish, add your cheddar cheese and bake 25 minutes.

When you pull this out of the oven, immediately add your bacon bits and chives.

    1. I just am seeing this! It is so easy to make this dairy free! Yes to dairy free sour cream, but usually I just do dairy free butter and dairy free cream cheese!
