My goal through the pandemic of Covid-19 is to keep my heart settled and my mind strong. I have a little girl who is watching me and feeling me. And I owe it to her to give her the best of me. While the world feels big and scary all around me, in our house, I will give her calm, structure and the best of me.
I made creamed spinach last night for dinner with burgers. We have been grilling out since we moved out grill to the deck. It makes it so much more functional and useful to us. I make this creamed spinach lots, its just a 12 ounce bag of fresh spinach, 3/4 block of cream cheese (and use daily free kite hill cream cheese if you are dairy free) 2 tablespoons of kerrygold butter (or ghee to keep it daily free), salt and then nutritional yeast (good for you and yummy). Begin melting our butter over medium heat (y’all get this pan!!!) and add your spinach to let it begin to saute and then add your cream cheese and nutritional yeast until all is combined. It is so creamy and so good. And such a compliment to any meal really. You will love it.
I posted the picture below on instagram last night. I took it holding Elliott Jane post feeding and before bath. Prime witching hour. The house was a disaster. We are really LIVING in these walls these days. The cat in the highchair makes me lose my mind. You get the picture literally. I am reminded how we all assume that “his or her” life is so much better than mine. “She” has it all together when really we are all the same just doing our very best. And that’s enough.
