I love a cold salad in the summer! This riced cauliflower salad is the best cold salad, it leaves you wanting seconds for sure. I love it with a burger or hot dog as a side, and its as delicious as it is pretty. If you love pasta salad, you are in for a treat.
This is one of those recipes you don’t measure, just throw a little in here and there and done! Use more salami if you love salami, more tomatoes if you love tomatoes…you get the picture. There is no right or wrong way to make this, add feta, add a vinegarette, it’s so good!
Bag of riced cauliflower (I bag a frozen bag and just keep it in the refrigerator to thaw)
10-12 cherry tomatoes, cut in half
2 tablespoons of olive oil
1 small can of black olives
1/4 orange pepper, diced
lots of small salami pieces, cut into 1/4 bite size pieces
salt, pepper and garlic to taste
Mix all your ingredients together, taste to make sure you don’t need any more garlic or salt. Store in the refrigerator for up to a week!
