Anything that leads with “twice baked,” you can sign me up. Growing up in Clarksville, Tennessee, we had this bakery that had THE BEST twice baked potatoes, and when my dad and I stopped on the way home from school to grab some twice baked potatoes for dinner, I knew it was going to be a good night! Something about it always felt special. Had that bakery known thirty years ago that cauliflower was on the rise and going to give a potato a run for their money (not really…) they wouldn’t have believed it.
This was as close as I could get to all those years ago. I love to have this with my reuben bake or a steak. It’s an easy side and leftovers are wonderful to convert to a caulfower soup full of nutrients, like bone broth and good-for-you spices.
Twice Baked Cauliflower
2 10 oz. bags of frozen cauliflower rice (or you can get two fresh heads of cauliflower and boil until they are soft)
4 oz. of Kitehill chive cream cheese
4 tablespoons of kerrygold butter or ghee
4 oz. of sour cream
salt, pepper and garlic to taste
4 oz. of shredded cheese (I prefer dairy-free cheddar)
6 pieces of bacon
1/3 cup of fresh chives
Preheat your oven to 400 degrees and go ahead and put your bacon on a parchment lined baking sheet and let your bacon cook for 425 minutes until it is well done. Set your bacon aside on a plate with a papertowel so it can cool and dry out some. Set aside. Leave your oven at 400 degrees for your cauliflower bake.
In your blender, add your cauliflower. I like to get the riced cauliflower and microwave it and put it right in. Then add to your blender, your butter, sour cream and cream cheese, salt, pepper and garlic. Blend this all together really well until it has a smoothie texture.
Pour this in a 9 x 9 casserole dish and add 4 oz. of cheese a top and cook for thirty minutes. Remove from oven and top with your crumbled bacon bits and fresh chives.
This will taste as good as it looks! I can’t wait for you to have it for a side. This is SO GOOD during the holidays with my keto dressing.
