Egg Salad


I have been a nanny the majority of my adult life until last year and every time I hear the word “salad” I immediately go to the jingle by the WIggles “fruit salad, yummy yummy…” it’s honestly not even a good party joke just a good “oh you really are a nerd joke”that no one gets but me… 

I like to have a cold salad on rotation in the refrigerator if you just need a bite of something easy, good and filling. Egg salad is full of protien and good fats and perfect if you are keto or just hungry! I like to just open the refrigerator and have a bite, but if you are more of a lady than me, serve this on a tomato wedge with some keto crackers and it is pretty and so delicious.

Egg Salad, yummy yummy


8 hard boiled eggs

1/2 cup primal kitchen mayo (use more or less here according to your preferences)

1 teaspoon of stevia

1 teaspoon of smoked paprika (this smoked paprika really makes it!)

salt and pepper to taste

Boil your eggs and then cut them up with this tool. I have been obsessed with this tool since I first saw it long ago in my moms kitchen, sometime I just make egg salad okay every time just to use it. But I also sing the Wiggles on demand, so there’s that. Mix all your ingredients and serve. I love it while the eggs are still warm, but this is a traditional cold salad.
