Creamy Enchiladas Verde

I love salsa verde, love it. So when I created this enchilada recipe, I wanted it to be:

  1. dairy-free, creamy and…

  2. with green enchilada (verde) sauce

Brad is more of a traditional enchilada fan so making this with green enchilada sauce and then, telling him they are dairy free — he was kinda sceptic. SPOILER ALERT: he ended the meal with “these were really good!” Duh, dude. These are wonderful out of the oven, and just as good reheated.

Creamy Enchiladas Verde

Ingredients:

1 pound of ground beef or shredded chicken (my airfryer garlic chicken would be amazing)

10 ounces of caulirice

1/2 onion; diced

4 ounces of mushrooms

1/2 green pepper; diced

2 tablespoons primal plate adobo seasoning

2 tablespoons of olive oil

8 ounces of dairy-free cream cheese (I always prefer kite hill food brand)

15 ounces siete foods verde enchilada sauce

1 package of siete foods cassava flour tortilla shells or a low carb tortilla/tortilla of your choice

Directions:

Preheat your oven to 375 degrees. In a large skillet, begin browning your meat in your olive oil, adding your onions, pepper and mushrooms and adobe seasoning over medium high heat. When your meat is browned, add in your frozen caulirice and mix together. Take your meat and veggie mixture off the burner and set aside.

In a medium mixing bowl, add together your sour cream and enchilada varde. Set aside.

In a large baking dish, begin filling your tortilla shells with your meat mixture, until you have used them all. Cover with your sour cream and enchilada sauce mixture. At this point if you are not dairy-free, add the cheese of your choice for some extra flavor, but I just put mine in just like this and they are perfectly creamy and delicious. The tart of the green salsa with the sour cream, y’all, is the perfect combo in my book.

This meal is so so flling and delicious and you will have leftovers for a few days, which is always a win. I had some extra “filling” left so I just stored it in an airtight container and had it for lunch the next day with salsa!
