Brussels Sprouts with Radishes

I made this yesterday on instagram and as I was sharing, several followers mentioned this would be so beautiful to serve during the holidays with all the vibrant colors, and that is such a great idea. We had this with pork belly, but serve it as a side with pork tenderlion or filet mignon and it would be the most beautiful side. Mashed potatoes or caulimash with some cranberry salad — oh man, I think I need to put up my Christmas tree!

Brussels Sprouts with Radishes


10 ounces of brussel sprouts (20-30 brussel sprouts cut in half)

20 or so radishes cut in half

1/2 of a red onion, diced finely

1/4 cup of pancetta (I usually just get this at whole foods or trader joes already packaged and use the entire package)

salt and pepper (use more salt than you think!)

2 tablespoons of olive oil


Preheat your oven to 350 degrees. Put all your ingredients in a casserole dish together and mix with your hands. Let cook for one hour and serve immediately.
